All four varieties can be used to make a delicious porridge, each with a different distinctive taste and texture. As a general rule, the finer the porridge oats or oatmeal, the shorter the cooking time required. The cooking time is reduced further if you choose porridge oats over oatmeal, as the oats are lightly steamed during the milling process before they are rolled. Oat farming at Hamlyns involves working closely with Scottish farmers to grow high-quality oats, which are rigorously tested and monitored from seed to harvest. After harvesting, the oats are cleaned and stored before being processed. The production process includes hulling to remove husks, kilning for flavor and preservation, and milling to achieve different textures. Finally, oats are packed using automated systems and delivered to stores, ensuring a fresh product from field to table. Sustainable practices, like using a wind turbine, enhance the process.

• Pinhead Oatmeal is the most traditional oatmeal. It's made from the whole grain, with just the outer husk removed, before the inner groat is cut into three pieces.
• Pinhead oatmeal makes a substantial, nutty porridge. No need to soak the oatmeal overnight, but it's best cooked in a saucepan, and takes longer to cook than porridge oats or stoneground oatmeal.
• Oatmeal is also perfect for adding texture and nutritional value to soups and stews, for toppings on pies, puddings and crumbles, and even for coating fish and meat before cooking.
